The Face Behind the Food Part One

We are featuring a special series of Head Chef blog posts. As there are so many to mention, this is part 1 where Private Dining London get up close to the faces behind the private rooms we all enjoy. Get ready for the other installments to follow...

 

 

 

 

 

GUS CROSBY, HEAD CHEF

Sea Containers, The Mondrian Hotel, 20 Upper Ground, London SE1 9PD

 

Gus grew up amidst sea and sand on the Sunshine Coast in Australia. He left school at the age of 15 to pursue his undeniable passion for cooking. He funded his way through culinary school by working as a

kitchen hand in a beachside restaurant and then embarked on 4-year apprenticeship working in as many kitchens as possible that would let him showcase his flair as a cook. In 2004, London beckoned and after a long and very bumpy flight, Gus found himself working in the kitchens of Smiths of Smithfield under the watchful eye of John Torode where he began to master his skills as a chef.


Positions at Wild Honey, Gordon Ramsay at Claridge’s and Lauceston Place followed. In 2014 Gus decided to embark on a new journey and join Executive Chef Luke Rayment (Gordon Ramsay) at Sea Containers as Head Chef. Since he’s arrived in London, some thrilling highlights have included

cooking at Elton John’s House and at the opening of the 2012 Olympics but, as a keen cricket fan, cooking at Lords was very special. In addition, Gus appeared on Celebrity Masterchef in 2015 when Sea Containers featured and once cooked 20 ‘purple’ inspired dishes at the world’s first 200-course tasting menu for Bompas & Parr.

 

Their Private Dining Room…

Located within Sea Containers restaurant and with its own secluded south facing terrace, the private dining room provides an intimate setting for up to 22 guests. Featuring bespoke gold dining tables and comfortable, leather seating as well as custom designed and atmospheric lighting, all designed by Tom Dixon.

DARREN LEADBEATER, HEAD CHEF

Chef Darren Leadbeater has been at Urban Coterie for seven months under the guidance of Chef Patron Anthony Demetre. Having served his apprenticeship in Australia he worked under Guilluame Brahimi at Guilluame at Bennelong and at Aria - Matt Moran’s flagship restaurant in Sydney. Darren then went on to take the position of Senior Chef de partie at the Four Seasons Hotel in the city before moving to London to travel. It was here he was introduced to Anthony Demetre working for him as Junior Sous Chef before going onto the position of Sous Chef at Osteria and moving on to his current role as Head Chef at Urban Coterie. Darren has a love of seafood, which he picked up from a chef Steve Skelly, whilst he was working at a restaurant called Sail’s at Lavendar in Sydney.

JONATHAN WRIGHT, HEAD CHEF
Berners Tavern, The London EDITION, 10 Berners St, London W1T 3NP

Jonathan joined the Berners Tavern team as Sous Chef a month after opening in 2013.  His move came after working with the notable Gordon Ramsay at both Claridges and York & Albany. Under the direction of Executive Chef Jason Atherton and Chef de Cuisine Phil Carmichael, Jonathan’s talent and passion was quickly recognised as he took on the role of Head Chef in 2015. Jonathan has been an integral figure in driving Berners Tavern’s ethos which celebrates English produce, creating simple yet elegant menus.

Jonathan is passionate about local ingredients, sourcing organically grown produce and offering his guests quality British food in a welcoming and comfortable environment; a spirit which is clearly apparent in the creativity and consistency of the Berners Tavern menus.’
